I’m so excited to have the talented Chef Deb Cantrell of Savor Culinary Services back on the blog sharing about one of my all time favorite foods…smoothies!!! I am a BIG smoothie fan and often use them as a healthy meal replacement. They’re a quick and easy way to start the day off with a healthy breakfast, a great way to pack in some of my daily veggie requirements as well as being a healthy dessert option for my sweet tooth at the end of the day! I was so excited to try this recipe (Chef Deb had me at “Carrot Cake”) and let me tell you this one doesn’t disappoint! I made mine in the evening, after another scorcher of a day, and added some ice for a nice cold and filling treat. And the best part, I had to fight the boys off! They loved it and enjoyed helping me prep and blend. Excited to add this healthy smoothie recipe to our family’s summer snack options!

Sip on This: Healthy Smoothie to Enjoy All Summer Long

 

Texas summers can be kind of miserable, that’s why I pretty much survive on smoothies when the temperatures reach the 100’s and the humidity becomes unbearable. Smoothies are a great way to stay cool, feel refreshed and add some nutrients to your diet! Sometimes l like to start my morning with a smoothie or have them as a little afternoon pick me up.

One of my favorite go-to recipes (that my meal delivery clients are also crazy about) is my carrot cake smoothie.  Just like the name indicates, this smoothie tastes a lot like carrot cake but in smoothie form! The coconut milk and coconut milk yogurt are what makes this smoothie special – it gives it the perfect amount of creaminess. You feel like you’re almost drinking a shake! The best part? It’s dairy free so if you’re lactose intolerant or trying to stay away from dairy you can still enjoy it.

I love when I can make recipes that taste like I’m cheating on my healthy diet, but that are actually good for me!

Carrots are in season so why not stop by your local farmer’s market or grocery store and stock up? Fresh, whole carrots last for about 4-5 weeks in your refrigerator so you don’t have to worry about the carrots going rotten soon after buying them.

This smoothie is packed with Vitamin C, so it’s a great immune system booster. The beta carotene in the carrots convert to Vitamin A in your body, which is great for your eyes and skin too! I always tell people that if you want a natural anti-aging drink, this is a good one for that, because it also contains anti-oxidants which will help you have glowing, healthy skin!

If you don’t have coconut milk or coconut milk yogurt on hand, you can always use almond milk and Greek plain yogurt instead (if you don’t mind the dairy).

CARROT CAKE SMOOTHIE

 

PREP TIME: 5 MINS

TOTAL TIME: 5 MINS

 

Ingredients:

  • 1 medium banana, peeled, diced
  • 1 cup diced carrots (about 2 medium-sized carrots), peeled if you’d like
  • 2/3 cup coconut milk
  • 1/2 cup coconut milk yogurt
  • 2 teaspoons maple syrup
  • Pinch of apple pie spice
  • Optional toppings: extra grated carrots, toasted coconut, toasted walnuts

Directions:

Add all ingredients in a blender and pulse for 30-60 seconds until smooth.  If the smoothie is too thick, add an extra 1/4 cup of coconut milk to thin it out.

Serve immediately, garnished with optional toppings if desired.
